Vanilla Chai Waffles


Changing up flavors to old favorites gives a renewed excitement to get cracking in the kitchen again! I mixed up my own chai spice blend (below) and have been making lattes, puddings and today.. waffles! These gluten free, vegan waffles are perfection every time. Makes 5-6


Dry


2 cups fine oat flour

1 1/2 tsp baking powder

1 1/2 tsp chai spice

1/4 tsp pink salt


Wet


1 1/2 cups almond milk

1 Tbs pure vanilla extract

1 tsp pure maple syrup

2 Tbs ground flax seed + 6 Tbs water (for flax eggs)


Preheat waffle iron to medium high.


Make the flax eggs: In small bowl mix 2 Tbs flax seeds with 6 Tbs water and set aside.


In medium bowl, whisk together dry ingredients-oat flour, baking powder, cinnamon and salt.


In large bowl, add almond milk, vanilla, maple syrup and flax eggs and whisk until well combined. Add dry ingredients and whisk together until well combined. The batter should be pourable, add 1-2 Tbs more almond milk if needed. Batter tends to thicken over time.


Spray waffle iron with healthy oil such as pure avocado or extra virgin olive oil. Pour 1/3 cup batter onto iron. Cook 4-5 minutes (mine were done in 4 minutes). Typically steam stops coming out of the waffle iron when they're done.


Top with berries, bananas, almond butter, maple syrup, chopped nuts and/or non dairy whip cream!


Chai Spice

3 Tbs ground ceylon cinnamon

1 Tbs ground cardamom

1/2 Tbs ground ginger

1/2 Tbs ground all spice

1/2 Tbs ground cloves

1/2 Tbs ground nutmeg
