Turkey Pumpkin Meatballs


Turkey pumpkin meatballs! Absolutely Delicious! I had some leftover pumpkin purée and these were born! Enjoy on pasta, salads, Buddha bowls but I just ate them off the baking sheet! Packed with lean protein and lots of nutrient filled ingredients!


1 lb organic ground turkey 93% lean

Heaping 1/2 cup pumpkin purée

1 Tbs extra virgin olive oil

1 Tbs pure maple syrup

1 egg (or flax egg)

1 tsp dried thyme

1 tsp dried sage

1 tsp cinnamon

Pinch of nutmeg

1 tsp pink salt

Large handful kale or spinach (no stems)


Preheat oven to 400. Mix all ingredients in large bowl until combined, do not over mix. Scoop onto lined baking sheet (I use this one https://amzn.to/3wHpqc4) and bake 14-16 minutes until internal temp 165. These pair deliciously with my butternut squash sauce; recipe found in dips, dressings and sauces guide!
