Sweet Potato Waffles
Delicious, wholesome sweet potato waffles! Made from oat flour and roasted sweet potato mash, these are gluten free and naturally sweetened! I added chai spice powder but cinnamon or pumpkin pie spice would be amazing too!
1 1/2 cups fine oat flour
1 Tbs baking powder
Pinch of sea salt
1 cup mashed sweet potatoes
3/4 cup plant based milk
6 Tbs avocado oil
2 tsp chai spice powder
2 tsp pure vanilla extract
Heat waffle iron and grab your avocado or evoo spray.
In small bowl, whisk together oat flour, baking powder, spices and salt.
In larger bowl, whisk sweet potatoes, oil, eggs, milk and vanilla until combined. Stir in dry ingredients and mix until well combined.
Spray your iron lightly with oil and pour 1/2 cup batter and cook for ~4 minutes (waffle irons may vary) typically steam ceases to escape when it's ready. Top with your favorite toppings and warm maple syrup if desired.
Notes: Best to eat right away but leftovers can be stored in fridge and crisped up in toaster.
