Sweet Potato Crackers

I have made lots of foods from scratch in the past 2 years but have not made my own crackers... until now! And let me tell you, I don't know what I was waiting for! These crackers are gone, gobbled up by myself and the family in 1 day! Lesson learned, I must double or triple the batch! These crackers are gluten free, grain free, garlic/onion free, vegan and completely wholesome! Great crunchy snacks on their own or with this hummus! https://www.laurenloliving.com/post/hummus
Makes ~60 crackers
1 cup raw almonds
1/2 cup mashed sweet potato
1/2 cup arrow root powder
1/2 tsp pink salt
1 Tbs fresh rosemary
2 Tbs extra virgin olive oil
Preheat oven to 375. Add almonds to blender or processor, I use this mini processor https://amzn.to/3RcB9aQ and blend until sandy, flour-like texture forms.
Transfer almond meal to a medium bowl and add sweet potato, arrow root powder, salt & rosemary. Stir in olive oil. Mix until well combined and a dough forms. Sprinkle a little flour on a large piece of parchment paper and place dough. Layer another piece of parchment on top of the dough and roll it out to be 1/8 inch thick. Cut into 1 inch squares, I used a pizza wheel. Transfer each square to a parchment lined baking sheet, leaving a little space between. Bake for 18-20 minutes until golden and edges are crispy. Mine were ready at 18. Let cool on pan for 5-10 minutes.
