Sticky Honey Noodles

These noodles are so delicious! Gluten free, dairy free, egg free and oil free! I'm so proud of how yummy this dish turned out, I called my husband away from working outside (and that really needs to get done-lol) to come and try this! Full of umami flavor that had me going back for more! I air fried the chicken with the simplest dredge and it could not have been easier! I don't know why eggs are traditionally used, it is not necessary! Simple really is best!

Serves 2


Noodles

8 oz Pad Thai brown rice noodles (I used Tinkyada brand)


Sauce

1/3 cup tamari sauce or coconut aminos

1 Tbs raw honey

2 cloves minced garlic (optional)

1/2 Tbs rice vinegar

2 tsp arrow root powder


Chicken

1 lb chicken tenders cut into bite size pieces

1/2 cup plant based milk

1/2 cup gluten free oat flour

Sesame seeds and cilantro to garnish


Prepare your noodles according to package directions. Drain and rinse thoroughly with cold water and set aside.


Preheat air fryer to 390. Set up 2 small bowls for chicken preparation. Pour milk in one bowl and oat flour in the other. Dip chicken pieces in milk then roll in oat flour to completely coat. Air fry for about 6 minutes (until 160-165 internal temp) shake chicken half way through cooking.


In small bowl whisk sauce ingredients, tamari, honey, garlic, ginger and arrow root powder until combined.


Warm non stick skillet to medium-low and add sauce mixture. Bring to a simmer, cook a couple minutes watching and whisking frequently until starts to thicken. If too thick, add a little water. (I added a couple tablespoons) The sauce should be a syrupy consistency.


Toss noodles and chicken in sauce until evenly coated and heated through. Garnish with fresh cilantro and sesame seeds. Watch the reel here https://www.instagram.com/p/ClxInPeDOZw/


*Notes* The cooking process mitigates vinegar's acidity and reflux effects of garlic.

Enjoy with chopsticks. This encourages slow eating, aiding digestion!
