Small Batch Grain Free Chocolate Chip Walnut Cookies

OH MY GOLLY! These are the best gluten free chocolate chip cookies I've had to date! Tender on the inside, gooey and a slight crisp to the exterior! My husband says the fastest way to ruin a cookie is adding nuts but I disagree! I grew up with nuts in my baked goods so call me old fashioned I guess-ha! These are vegan and oil free, equating to the most delicious healthy cookie and I'm all IN!

Makes 10

1/2 cup super fine blanched almond flour

1/2 cup quinoa flakes

1/4 tsp baking powder

Pinch sea salt

1/4 cup + 1 Tbs all natural creamy almond butter

1 Tbs water

3/4 tsp pure vanilla extract

3 Tbs pure maple syrup

1/4 cup chopped walnuts

1/4 cup dairy free chocolate chips (Enjoy Life) or carob chips

Maldon fancy salt for sprinkling to make extra Fab!

Preheat oven to 350. Line cookie sheet with parchment paper.

Whisk almond flour, quinoa flakes, baking powder and salt in medium bowl.

Add in almond butter, water, vanilla, syrup, nuts and chocolate and stir until well combined.

Using 1.5 Tbs cookie scoop drop cookies onto sheet and slightly flatten. Bake 11 minutes. Cool on cookie sheet for 5 minutes then transfer to wire cooling rack. Sprinkle with fancy salt if desired.
