Silky Pumpkin Pasta
Dive into this delicious creamy pumpkin pasta! I am running into cans of pumpkin this time of year so I can't help but use pumpkin in everything! This dairy free sauce comes together in less than 5 minutes for a quick and easy family meal! Choose any pasta you like, I went with Jovial brand gluten free brown rice fusilli! 12-16 oz fusilli gluten free brown rice pasta (Jovial brand)
1 cup pasta water
1 Tbs extra virgin olive oil
2 minced garlic cloves (optional)
1 can pure pumpkin puree
1/2 cup full fat coconut milk (I like Trader Joes)
1/8 tsp nutmeg
Pink salt & black pepper to taste
Optional sprinkle with nutritional yeast
Cook your pasta al dente according to package directions, reserve 1 cup pasta water. Set pasta aside.
In large sauce pan, heat olive oil over medium heat. Add minced garlic and saute until fragrant, about 30 seconds. Add pasta water, pumpkin puree and nutmeg. Whisk until glossy and homogeneous. Add coconut milk and stir until combined. Fold in pasta, heat through a couple minutes. Salt and pepper to taste. Sprinkle nutritional yeast if using. Serve immediately.
