Shrimp Sesame Stir Fry

I love to make stir fry! It's simple, versatile and always yummy with veggies for days! Seriously, you can pack so many vegetables into stir fry and no one thinks ugh why so healthy?! LOL It's Sneaky! You can easily tick your daily veggie requirement box with stir fry. Tonight I added cabbage, which is amazing for gut health and adds some crunchy texture.
For the sauce
1/3 cup tamari or coconut aminos
1/3 cup water
1 Tbs raw honey
1 Tbs sesame oil (extra virgin olive oil can be used)
1 Tbs rice vinegar (optional)
1 Tbs fresh grated ginger
1 Tbs sesame seeds
1/2 Tbs arrow root powder
For the veggies
2 Tbs+ broth or water
2 cups cabbage coleslaw mix
2 medium carrots peeled
1-2 cups green beans
1-2 cups broccoli
Garnishes
Chopped nuts
Sesame seeds
First make sauce in medium bowl, whisking together and set aside.
In large pan over medium heat add broth or water and cabbage, carrots, green beans and broccoli. Cook for 2-4 minutes, until crisp tender adding more liquid if needed to prevent sticking. Turn down heat to low. Pour in sauce and cook 2-4 minutes over low heat until sauce begins to thicken. Garnish and serve over brown rice or quinoa! Great protein additions would be chickpeas, shrimp or chicken!
*Note: I often make stir fry when I have leftover veggies and protein, perfect way to clean out the refrigerator and makes prep time a cinch!
