Sheet Pan Hash

Sheet pan meals are easy and a great way to pack in tons of vegetables! Add your choice of protein; chicken, chickpeas or these chicken sausages from Applegate! A savory meal that wholesome and delicious!

Serves 4

2 medium diced sweet potatoes

1-2 medium zucchinis chopped

2 medium carrots sliced

1 red bell pepper diced

2 chicken & apple sausages from Applegate sliced into coins

1/2 Tbs extra virgin olive oil

1 tsp finely chopped fresh rosemary

Pink salt & pepper to taste

Preheat oven to 400. Line baking sheet with parchment paper.

In medium bowl, toss sweet potatoes and carrots in half of allotted oil and sprinkle with rosemary, salt & pepper. Spread onto baking sheet. Cook 15 minutes.

While potatoes and carrots are cooking, using the same bowl, toss zucchini and red pepper in remaining oil & sprinkle with salt & pepper.

Remove pan from oven and place zucchini, red peppers and chicken sausage. Cook 10-15 minutes until all veggies are tender and sausage warmed though. (Cooking time may vary based on size of veggies).
