Rustic Sweet Potato Rounds

These make the perfect appetizer for the holidays! And I've called them "rustic" so I don't have to make them perfectly pretty-LOL Bake, schmear and sprinkle! Made with 6 wholesome ingredients that will leave you happy and satisfied. For those that can't tolerate goat cheese, cashew cream cheese would work. Top with nuts, dried fruit and a drizzle of raw honey-yum!
Makes 16
2 small uniform sweet potatoes
2 oz goat cheese
2-3 Tbs chopped pecans
2-3 Tbs chopped dried cherries (or dates or apricots for less acidity)
2 tsp raw honey
1/2 Tbs plant based milk
Pink or sea salt & pepper
Preheat oven to 400. Line baking sheet with parchment paper.
Peel and slice sweet potatoes into 1/2" rounds (mine were a little smaller).
Lightly spray both sides with healthy oil (I used avocado) and sprinkle with salt & pepper. Bake 25-30 minutes until tender (flipping half way through baking).
Mix goat cheese, 1/2 tsp honey and milk until combined and creamy.
Schmear goat cheese on sweet potatoes, top with fruit & nuts and drizzle with remaining honey. Add more salt & pepper if desired. Serve immediately!
