Pumpkin Spice Energy Balls

If you haven't already deduced, I'm Team Pumpkin and Team Purple ;) These energy balls are ready in 10 minutes or less and make the best, healthy snack or treat! Packed with lots of pumpkin spice and pure pumpkin puree, these are Fall-tastic!

Makes ~24

1 1/2 cup gluten free rolled oats

1/2 cup pure pumpkin puree

1 cup all natural almond butter

1/3 + 2 Tbs pure maple syrup

1 tsp pure vanilla

1/4 cup chia seeds

1 Tbs pumpkin spice

Tiny pinch salt

1/4 carob or vegan chocolate chips (Hu or Enjoy life are my favorite brands)

Mix all ingredients in bowl (add more oats if too sticky) Refrigerate for 30 minutes and with a 1.5 Tbs size 50 cookie scoop form your balls. Refrigerator storage in sealed container for up to 1 week.

*Notes: Optional add-ins; hemp hearts, flax seeds, chopped nuts and pumpkin seeds!
