Pumpkin Pie Oatmeal Bake

Thanksgiving is upon us and I am all things Pumpkin! This oatmeal bake is wonderful for that easy breakfast! Healthy, hearty and delicious! Gluten free, dairy free and plant based! I know you've got some extra pumpkin hanging around ;)
Serves 4-6
2 cups gluten free rolled oats
1 1/2 cup plant based milk
2 tsp Pumpkin pie spice
Pinch of pink salt
1 teaspoon baking powder
2 Tbs ground flax seeds
1/4 cup pure maple syrup
1 cup pure pumpkin purée
2 Tbs unrefined coconut oil
1/2 cup chopped pecans
Preheat oven to 375. Mix all ingredients together and pour into 8 x 8 dish. Bake for 35 minutes or until set. Top with all natural Fronen frozen non dairy dessert (found at Walmart) for some extra love!
