Pumpkin Pie Chia Pudding
Okkk I am loving this pumpkin pie chia pudding! Real pumpkin, chia and "cream cheese" frosting is a healthy trifle delight! Indulgent breakfast, snack or dessert without the guilt or havoc on the digestive system. Everything I eat has nutritional value. No fillers, additives/preservatives, fake or inflammatory ingredients. This is gluten free, dairy free, refined sugar free and loaded with vitamins, calcium, fiber and omega 3's. Best part? It's DELICIOUS!
1/4 cup pure pumpkin puree
1-2 tsp pure maple syrup
1/4 tsp pumpkin pie spice
Mix all together
Chia Pudding (2 servings)
1/4 cup chia seeds
1 cup non dairy milk (oat milk works great!)
Mix together in small bowl stirring often for 5-10 minutes until set, then refrigerate for several hours or overnight.
Sweet Potato Cream Cheese Frosting
In a small bowl or ramekin, place pumpkin layer first, then add 1/2 cup chia pudding and top with cream cheese frosting... piped if you're feeling fancy ;) Sprinkle with pumpkin pie spice and chopped pecans.
