Protein Choco Chip Cookies

My son is a sweets and junk lover! So hard to get him to intake anything healthy. All he wants is packaged snacks, treats, candy... I catch him sneaking and hoarding the few not so healthy items I buy. But he will eat healthier snacks if I can hide the healthy lol! He came to me the other night complaining about our food situation (the boy is always hungry) and I listed all the undesirables (to him) apple with almond butter, energy balls, veggie sticks and he said I just want to eat cookies (insert eye roll). I put together these nutrient dense cookies for him to try (fingers crossed)! For the record, I think they're delicious!
Makes 18
1 cup thick greek yogurt (or thick coconut yogurt for non dairy)
1/3 cup + 1 Tbs coconut sugar
1 egg
Pinch sea salt
1/2 tsp pure vanilla extract
1 cup fine almond flour (may use oat flour for nut free)
1/2 cup rolled oats
1/4 cup mini chocolate chips (Enjoy life brand) may sub carob chips
Preheat oven to 375. Line baking sheet with parchment paper.
In medium bowl, add yogurt, egg, sugar, salt and vanilla and whisk or beat together with mixer.
Mix in almond flour and oats. Depending on yogurt consistency, you may need to add more almond flour and/or oats to achieve a thicker dough. My dough was a little thin but held cookie shape when scooped onto baking sheet.
Stir in chocolate (or carob) chips.
Using 1.5 Tbs cookie scoop, drop dough onto sheet and bake 15-17 minutes. Mine were done at 17. Cool on sheet for 5 minutes, then transfer to wire rack.
Store in sealed container in refrigerator.
