Perfect Pancakes!

The best vegan pancakes!! Without eggs, achieving structure and fluffiness is near impossible but this recipe nails it! These have a tender texture but not gummy with a crisp exterior! These will quickly make it to the top of your breakfast list!

1/2 cup + 2 Tbs jasmine rice flour

1/2 cup + 2 Tbs fine almond flour

1/4 cup arrow root powder

2 1/2 tsp baking powder (aluminum free)

Pinch of salt

1/2 cup + 2 Tbs coconut milk

2 Tbs water

2 tsp pure vanilla

1 Tbs maple syrup

Mix dry then wet ingredients. Warm griddle to 350 lightly oil. Pour 1/3 cup batter and cook ~3 minutes each side.
