Pecan Pie Tartlets

These healthier pecan pie tartlets are decadent and delicious! Bite size so you can enjoy a couple or 10 lol! Gluten free, dairy free, refined sugar free with wholesome ingredients! The crust on these have the most tender crumble, they are the perfect vessel for the caramel filling that's naturally sweetened with dates!
Makes 24
Crust
1 cup fine almond flour
1/4 cup coconut flour
1/4 cup melted unrefined coconut oil
3 Tbs pure maple syrup
1 tsp pure vanilla
Filling
1 packed cup pitted medjool dates
4 Tbs hot water
1/4 cup all natural almond butter
1/2 cup chopped pecans
1/2 tsp pink or sea salt
Preheat oven to 350. Mix crust ingredients together until a dough forms. Scoop 1/2 Tbs of dough into each mini muffin hole and use back of spoon to press. Watch reel here https://www.instagram.com/p/CnPLHkvLyMz/
Bake 8-10 minutes until slightly golden, mine are done at 8 minutes. Let cool a few minutes before filling.
For the filling, place all ingredients except pecans in a food processor and process until mixture turns creamy. Stir in chopped pecans. Fill each tartlet with date mixture and press a whole pecan on top.
Store in sealed container at room temperature for 1-2 days then place in refrigerator. These also freeze great!
