Nutty Energy Balls


Made from the leftover macadamia nut pulp from my homemade nut milk, these energy balls are YUM! All natural ingredients, no added sugar and plenty of add in options!

Makes 8


1/2 cup macadamia nut pulp (almond works too)

1/2 cup soaked and pitted dates

1/4 cup unsweetened shredded coconut

1 tsp cocoa or carob powder

1 tsp melted coconut oil

Pinch of sea salt

1/4 tsp pure vanilla extract (optional)

2 Tbs collagen (I like Vital Proteins) optional


Mix nut milk pulp and dates in processor until combined.


Add remaining ingredients and pulse until dough forms. You may need to add water (1 tsp at a time) to achieve desired consistency.


Scoop into balls, place on parchment paper lined sheet. Place and store in freezer.
