Nomato Sauce

The sky's the limit with nomato sauce and here's my latest combination! This is the sauce I used for last night's pizza. Feel free to play around with the ingredients and adjust to your liking, this sauce is goof-proof!
Makes ~2 cups
2 medium carrots
2 celery ribs
1/4 cup beet
1/4 cup cooked mushrooms
1 cup chicken broth
1 Tbs Italian seasoning
1/2-1 tsp salt
1/4 cup diced leeks or vidalia onion
1 minced garlic clove
In a boiling pot of water place carrots, celery and small beet. Remove carrots and celery when tender, about 5 minutes. Place in high powered blender. Remove beet when tender 20-30 minutes and place in ice bath. Gently peel away skin.
Heat 1/2 Tbs extra virgin oil and saute mushrooms for 5 minutes over medium heat. Then add garlic and onions (if using) and saute a few more minutes until onions translucent and garlic fragrant. Add to your blender, along with beet, broth and seasonings. Blend until smooth.
*Note: If reflux managed, you can try cooked onions and garlic as their relaxant effect on the LES is lessened when cooked at high heat. Leeks and vadalia onions are milder and better choices for reflux.
