Mushroom Turkey Burgers!

I needed to cook up my ground turkey in the refrigerator and my favorite go to is always turkey burgers! I usually make my tried and true sweet potato burgers recipe here https://www.laurenloliving.com/post/sweet-potato-turkey-burgers but wanted to dapple with something new tonight! I had mushrooms in the fridge... and coconut yogurt... and almond flour in the pantry... things were looking promising! These burgers turned out juicy and delicious!
Serves 4-5
1 lb ground turkey 93% lean
2 cups choice of sliced mushrooms (I used bella)
3 oz (just shy of 1/4 cup) plain unsweetened coconut yogurt (Cocojune brand)
1/2 cup almond flour or meal
1 egg (whisked)
Large handful chopped baby kale
1/2 tsp cumin
1 Tbs extra virgin olive oil
Sea salt and black pepper
In large skillet, warm olive oil over medium high heat and place mushrooms cooking 3-4 minutes then turn, cooking another 1-2 minutes until tender. Season with a dash of salt and pepper if you like. Chop shrooms and set aside to cool.
In medium bowl, mix together egg, yogurt, cumin and almond flour. Then add in turkey, kale and mushrooms mixing with your hands until even combined. Do not over mix. Form into 4 or 5 patties.
Heat grill (I use my foreman) and spray with oil. Place patties on grill and sprinkle with salt & pepper. Cook 5 minutes or so until 165 internal temp. Rest patties for 5 minutes and serve. Sliced avocado would yum on these!
Notes: Feel free to add a little garlic and/or onion powder if you can tolerate. Or if you have fresh on hand that is always preferable.
