Monster Energy Balls

Protein balls are a huge hit around our house! Kid friendly, great for lunch boxes and after school snacks. The kids love them and I feel good about these snacks as they are packed with high value ingredients. Trader Joe's sells candy coated milk chocolate candies that do not have artificial dyes. I know, I know, rides the healthy line (it's still candy) but sometimes a treat is in order. You could always substitute dried fruit, shredded coconut, chopped nuts or double the chocolate!

Makes 20

1 1/4 cup gluten free rolled oats

3/4 cup all natural peanut butter

1/4 cup raw honey

1/4 cup clean protein powder (I like Naked brand)

2 Tbs ground flax seeds

2 Tbs chia seeds

Pinch of pink salt

1/2 tsp pure vanilla extract

1/4 cup high quality chocolate chips (Hu or Enjoy Life)

1/4 cup candy coated chocolates (Trader Joe's)

In large bowl, mix all ingredients together with a mixer until well incorporated. Using cookie scoop (mine is 1.5 Tbs) roll into balls and refrigerate. Watch the reel here https://www.instagram.com/p/CjSyseCvpV2/
