Maple Pecan Overnight Oats

Can we just stop for a moment and talk about overnight oats?! I never knew such a thing existed until I started getting into more foodie things.. not that this is foodie per se but it's not conventional stovetop oatmeal. In fact, most enjoy overnight oats cold! Which I have come to love! SO many different flavors for overnight oats (cinnamon apple can be found in my free recipe guide). Great for busy mornings with this make ahead breakfast. The best thing about overnight oats is that the soaking process makes them easier to digest. My latest combination brings the sweet maple we all love, warm cinnamon and a decadent pecan butter together for the tastiest bowl of oats!

Serves 3


1 cup gluten free rolled oats (One degree sprouted oats is my fave)

1 Tbs chia seeds

2 Tbs chopped pecans

1/2 tsp cinnamon

1 cup non dairy milk

1/4 cup + 2 Tbs coconut yogurt

1 tsp pure vanilla extract

1 tsp pure maple extract

1 Tbs pure maple syrup

3 Tbs ground flax seeds


Mix all ingredients together except flax seeds in small bowl or container. Place flax seeds on top of mixture (do not mix) place oats in fridge for several hours or overnight.
