Lauren's Kinder Bars

These remind me of kind bars but "kinder" lol made with real, wholesome ingredients leaving out those stabilizers, refined sugars and shady "natural flavors" As always gluten free, dairy free and refined sugar free. Score 1 for another no bake snack! Be kind to your body and to others! A small kind gesture or word can turn around someone's day and your own.
Makes 20
4 cups puffed brown rice (Nature's Path)
3/4 cup all natural almond butter
1/2 cup pure maple syrup
6 Tbs unrefined coconut oil
Pinch of pink salt if almond butter salt free
1/2 cup chopped raw cashews
1/4 cup chopped raw almonds
1/4 cup pumpkin seeds
1/4 cup chia seeds
1/4 cup dried blueberries
2 Tbs dried unsulphured apricots
In large bowl place puffed rice, nuts, seeds, and dried fruit. In small bowl combine almond butter, oil and syrup and mix well. Pour over rice mixture and stir until completely coated and everything is well mixed.
Line 9x13 dish with parchment paper and press rice mixture firmly and evenly into dish. I took a large glass measuring cup, placed a piece a parchment paper between it and the bars and really pressed down to pack as tight as possible. Watch the reel here https://www.instagram.com/p/ClrmoaRJ86r/
Place bars in refrigerator for a few hours to harden then cut into 1 inch bars. Store in sealed container for up to 2 weeks.
