Healthy Spinach Artichoke Dip

This healthy party dip favorite is gluten free, dairy free, vegan and free of additives/preservatives. Super creamy and delicious, you'd never know it was good for you! Serve with fresh veggies or Siete brand tortilla chips. Perfect for football parties, pot lucks or lunch ;)

Serves 8

1 cup raw cashews (soaked overnight)

1 1/4 cup homemade mayo (recipe linked)

1/4 cup water

16 oz frozen spinach (thawed and drained)

12 oz frozen artichokes (thawed and drained) I use Trader Joe's, no preservatives!

1/4 cup finely chopped onions (optional)

2-4 garlic cloves minced (optional)

1 tsp pink salt

1/2 tsp pepper

Preheat oven to 400

Add cashews, mayo and water to a food processor (I used my Vitamix) and blend until smooth.

Squeeze excess liquid from spinach and artichokes and place in large bowl. Add cashew mixture, salt & pepper.

Saute onions & garlic a few minutes (if using) and add to spinach mixture.

Stir all together until well combined. Place in oven safe dish and bake 20 minutes. Watch the reel here

Notes: If tolerated, 1/4 cup goat cheese can be added for an even creamier dip! (Reduce mayo by 1/4 cup)
