Healthy Pop Tarts

Oh the box version of these make me cringe! They're my processed junk food nightmare. Loaded with refined sugars and flour, artificial ingredients, additives/preservatives... I don't need to go on, you know. But my kids still want these soooo there can always be a healthy alternative! Made with cassava flour, these are gluten and grain free. No refined sugar, only a few simple ingredients with a real feel good icing. Sprinkles have no artificial dyes! I was mom of the day with these!

Makes 4

Pop Tarts

1 1/3 cup cassava flour

1/4 cup unrefined coconut oil

1/4 cup pure maple syrup

1 egg

Pinch of pink salt

1 tsp pure vanilla extract

Fruit Filling (or use all natural store bought)

1 1/2 cups mixed berries. For reflux use dates or unsulphured dried apricots

2 Tbs + 2 tsp raw honey or pure maple syrup

1/2 Tbs fresh lemon juice (cooking process burns of acidity or may omit)

1 Tbs chia seeds

Coconut butter Icing

2 Tbs melted coconut butter

1/2 Tbs melted coconut oil

1 1/2 Tbs pure maple syrup

1 Tbs plant based milk

Preheat oven to 375. In medium bowl, combine pop tart ingredients and mix until dough forms. With your hand sculpt into a disc. Place in fridge for 20-30 minutes to chill.

Make fruit filling while dough is chilling. Combine fruit, sweetener, and lemon juice to saucepan over medium heat and bring to a simmer. Reduce the heat to low and continue cooking until the fruit breaks down about 10-15 minutes. Stir in chia seeds and cook for 1-2 minutes, then remove from heat.

Remove chilled dough and roll out on parchment paper to be 1/8 inch thick, dusting with a little flour as needed. If dough is dry, add a few sprinkles of cold water. Measure 3 1/2 x 5 inch rectangles for cut outs. Place 4 rectangles on ungreased baking sheet and add 1 1/2 Tbs fruit filling and spread, leaving 1/4 inch space around edges. Top with remaining lids and pinch seams with fork. Poke a few holes in lids with toothpick. Bake 8-9 minutes. Let cool on sheet.

While the pop tarts are cooling, make the icing. Whisk all ingredients until smooth. Drizzle pop tarts with icing add sprinkles if desired. I used Supernatural brand. Watch the reel here
