Healthy Chicken Salad

I don’t like chicken salad...said no one ever! Perfect to meal prep and always a crowd pleaser!
 Serves 4-6

2 1/2 cups shredded chicken- easy recipe here: 1/4 cup mayo (as clean as you can find-I like Primal Kitchen's avocado) 1/4 cup coconut yogurt (cocoyo brand) 3/4 cup diced celery 3/4 cup seedless grapes (halved)

1/4 cup chopped raw pecans 1/2 tsp pink salt 1/4 tsp black pepper (optional)

Garnish with slivered raw almonds

In a large bowl stir mayo, yogurt, salt and pepper. Add chicken, celery, grapes and pecans and refrigerate covered for 30 minutes to marry flavors. Top with more pecans or almonds if desired. Serve over greens! I rolled up in bok choy and it was delicious!

Note: For time saver, I often use natural rotisserie chicken.
