Ground Turkey Teriyaki

Super delicious, healthy and nutritious meal right here! Lots of flavor with ingredients selected to be acid reflux friendly and anti-inflammatory! Serve over brown rice, cauliflower rice, wilted shredded cabbage and in lettuce wraps! I'm so excited for all the meal options with this slightly sweet and savory teriyaki!
Serves 4-5
1 lb organic ground turkey 93% lean
1 cup finely chopped broccoli
3 small grated carrots
1/2 cup green beans
1 tsp healthy oil (extra virgin olive oil avocado oil)
Sauce
1/2 cup low sodium tamari sauce or coconut aminos (for soy free)
1/4 cup water
2 Tbs pure maple syrup
1 tsp ginger powder
1 Tbs rice vinegar
Thickening slurry
1 Tbs arrow root powder
2 Tbs water
First, if you're serving with rice, prepare the rice. (Trader Joe's has a great frozen microwave brown rice option if you're looking for a time saver).
Steam broccoli and green beans (I usually have these prepped ahead of time and throw in from my fridge). Feel free to add in any veggies that you may have on hand!
In non stick skillet, whisk together tamari, water, syrup, vinegar and ginger over medium heat. In small bowl, stir arrow root powder and 2 Tbs water until dissolved and add to sauce.
Bring sauce to simmer, watching closely and whisking occasionally until starts to thicken. Transfer sauce to small bowl and set aside.
Using same skillet, add oil and warm over medium heat. Add turkey and cook until partially done (some pink showing) then add carrots. Finish cooking until turkey no longer pink, breaking into small pieces with a fork.
Add in broccoli and green beans and stir sauce in until mixture is evenly coated. Cook for a couple minutes until warmed through and serve! Garnish with sesame seeds, chopped nuts or fresh herbs! Watch the reel here https://www.instagram.com/p/Co_Cp2EuqCp/
