Goodness Gracious Granola!

Let me just start by saying this is the very best, healthy, most addictive granola I've ever had! So many ways to make it your own. Wonderful for smoothie bowls, yogurt cups, trail mix combos, as cereal and of course on its own! Because is scrumdidlyumptious! Could someone check my spelling on that-ha!

Makes 8 cups

4 cups gluten free sprouted rolled oats (I use One Degree Organics)

1 cup raw unsalted pecans

1/2 cup raw unsalted almonds

1/2 cup pumpkin seeds

1/2 cup pure maple syrup

1/2 cup melted unrefined coconut oil

1 tsp pure vanilla

1/2 tsp cinnamon

3/4 tsp pink salt

2 Tbs hemp hearts

2 Tbs ground flax seeds

Optional mix-ins after granola is baked: 1/2 cup dried fruit, 1/2 cup chocolate chips (Hu brand or Enjoy life) 1/2 cup unsweetened coconut flakes.

Preheat oven to 350. Line baking sheet with parchment paper. Combine all ingredients in large bowl until well coated. Spread granola onto sheet and pat down tightly with spatula. I can't have enough of these magic tools Place in oven for 12 minutes then remove and flip granola. Press granola evenly and firmly onto sheet and return to oven for another 10-12 minutes. Watching closely to prevent burning. Remove from oven and let cool untouched for 45 minutes. This ensures crunchy, clumpy granola! YUM! Stores for up to 2 weeks in sealed container.
