Gluten Free Vegan French Toast
Like the hunt for the fountain of youth, wholesome minimally processed gluten free bread feels like a similar quest. Don't be fooled by most gluten free breads, they use highly processed starches and additives with low nutritional value ingredients. Simple Kneads makes a gf sourdough with ingredients I feel good about it. Traditional french toast batter uses eggs which I have acquired an intolerance to. Eggs are a common allergen and food intolerance, if you're having gut trouble you may want to consider omitting them for a trial period and evaluating your body's response. SO where does that leave us? Crying without our favorites? No way, with a little modification a classic dish can be made anti-inflammatory and tasty!
Serves 2-3
1/2 cup almond milk (Malk brand is simple and clean)
2 Tbs arrow root powder
1/2 tsp cinnamon
1/2 tsp ground flax seeds
1/4 tsp baking powder
1/2 tsp pure vanilla extract
3-6 slices of Simple Kneads gluten free sourdough bread
Heat griddle or pan to medium and lightly spray with healthy oil such as pure avocado. Whisk milk, arrow root powder, cinnamon, flax seeds, baking powder and vanilla in bowl and transfer to shallow dish. I used an 8x8 dish. Soak bread in mixture for 10 seconds each side and place on griddle. Cook 2-3 minutes each side. Sprinkle with powdered unsweetened coconut and drizzle with pure maple syrup.
