Gluten Free Chicken & Waffles

These gluten free, egg free chicken and waffles are THE BEST! My husband said if these are healthy sign me up-lol! I admit I feel immense pride when I can take a comforting favorite (almost always ridden with unhealthy ingredients) and modify it into a tasty, healthy version! No depravity here-the chicken is golden fried in the air fryer avoiding any use of oil. The waffles are made from fine homemade oat flour and are light and crispy! You'll want to make this for your next meal!

Serves 4

Chicken Tenders

4 chicken breasts (organic if possible)

1/2 cup blanched almond flour

1/2 cup hemp hearts (or double the almond flour)

1/2 tsp cumin

1/2 tsp paprika

1 tsp pink salt

1/2 cup almond milk (I used Malk brand)

Preheat air fryer to 390.

Cut chicken into strips. In small bowl whisk together flour, hemp hearts, cumin, paprika and salt. In a second small bowl pour your almond milk. Dip chicken in milk then dip into almond flour mixture coating completely. Place on plate or platter then transfer to air fryer. Air fry 8-10 minutes until center reaches 160-165. Let rest 5 minutes before serving.

Oat Waffles

Makes 5-6


2 cups fine oat flour

1 1/2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp pink salt


1 1/2 cups almond milk

2 tsp pure vanilla extract

1 tsp pure maple syrup

2 Tbs ground flax seed + 6 Tbs water (for flax eggs)

Preheat waffle iron to medium high.

Make the flax eggs: In small bowl mix 2 Tbs flax seeds with 6 Tbs water and set aside.

In medium bowl, whisk together dry ingredients-oat flour, baking powder, cinnamon and salt.

In large bowl, add almond milk, vanilla, maple syrup and flax eggs and whisk until well combined. Add dry ingredients and whisk together until well combined. The batter should be pourable, add 1-2 Tbs more almond milk if needed. Batter tends to thicken over time.

Spray waffle iron with healthy oil such as pure avocado or extra virgin olive oil. Pour 1/3 cup batter onto iron. Cook 4-5 minutes (mine were done in 4 minutes). Typically steam stops coming out of the waffle iron when they're done.
