Gingerbread Power Bites

These gingerbread power bites are full of protein with the option to add in protein powder if desired. Molasses is naturally rich in antioxidants and essential vitamins and minerals. I get to have a Holiday treat but in a healthy way!

Makes ~15


1 cup creamy all natural unsalted almond butter

1/4 cup molasses or pure maple syrup

1/4 cup oat flour or protein powder

5 Tbs coconut flour

1 1/2 tsp cinnamon

1/2 tsp ginger

1/2 tsp cloves

1/2 tsp sea salt

1/2 tsp pure vanilla extract


In medium bowl combine all ingredients with hand mixer. Using cookie scoop (mine is 1.5 Tbs) scoop dough and with your hands shape into balls. Place on parchment paper and store in refrigerator.


*Note* Substitute sun butter for nut free option
