Gingerbread Granola!

Homemade granola has to be one of my favorite snacks! Holiday treats don't all have to be filled with white flour, sugar and butter. You won't miss any Christmas cheer with this gingerbread granola! Perfect to pack into treat bags for school parties, delivery drivers and festive on the go snacks! Healthy, yummy and oh so addictive! Having these in single bags aid portion control 😂 GF/DF/RSF/V
Makes 4 cups
2 cups gluten free rolled oats
1/2 cup raw pecans
1/4 cup raw walnuts
2 Tbs chia seeds
2 Tbs hemp hearts
1 tsp sea salt
1/2 tsp cinnamon
1/4 tsp ginger
1/8 tsp cloves
1/2 tsp pure vanilla
1/4 cup unrefined coconut oil
3 Tbs pure maple syrup
2 Tbs molasses or date syrup
Preheat oven to 350. Line baking sheet with parchment paper.
In medium bowl, whisk together oats, nuts, chia seeds, hemp hearts, spices and salt.
In small bowl, whisk together oil, vanilla and sweetener until well combined and pour onto oat mixture. Stir until well coated and spread onto parchment.
Bake 10 minutes and turn granola, pressing mixture tightly together with spatula. Bake another 10 minutes until lightly golden. Remove and let cool untouched on wire rack for at least 30 minutes. Store in sealed container for up to 2 weeks.
