Garden Salad with Healthy Ranch

I am eating more and more salads and loving every bite! I can easily get in my daily healthy greens and veggies without feeling like it's a chore! Plus it's easy on my tummy and never makes me feel weighed down or sluggish. I make a batch of this delicious vegan ranch and use through the week.

2-3 cups kale/spinach/shredded cabbage

1 peeled carrot

1 ear sweet corn

1/2 cup green beans

1/2 cup grilled chicken

1 Tbs pepitas

1 Tbs raisins

1 Tbs hemp hearts

Vegan Ranch Dressing

1/2 cup raw cashews (soaked overnight)

3/4- 1 cup coconut milk (I like this clean option Thai Kitchen

1 tsp Italian seasoning

1/4 tsp celery seed

1/2 tsp dried dill

3/4 tsp sea salt

1 tsp onion powder (optional)

1/2 tsp garlic powder (optional)

Blend all in high powered blender, store in refrigerator will thicken over time. Use as a dip or thin with a little water as needed. For more healthy dressings check out my dips/dressings/sauces guide found in Recipes!
