"Cream Cheese" Frosting

Non dairy and all natural this cream cheese frosting will blow your mind! Made from white sweet potatoes (yes they do exist) will have you rethinking food possibilities. This frosting is creamy, has the perfect texture and heck it fooled me! Pipes beautifully! Make all your frosting dreams come true! Serves 24

1 large white Hannah sweet potato (for 1 heaping cup)

6 Tbs melted unrefined coconut oil

1/2 cup pure maple syrup

2-3 Tbs water

Zest of 1 large lemon

1/8 tsp pink or sea salt

Preheat oven to 400. Bake sweet potato until tender about an hour or so and then scoop flesh from skins. Place heaping 1 cup mashed potato into blender with oil, syrup, lemon zest, salt and 2 Tbs water and blend until creamy. Add more water if needed, careful to not make too thin (frosting will thicken). Place in refrigerator and store for up to 1 week.
