Chocolate Cherry Popcorn Bites

Eek! I am so excited for this new snack I just made! I'm calling it a snack but it's definitely treat worthy!! Sweet and salty-the ultimate combo and cherry and chocolate are a match made in heaven! Fiber from the popcorn helps you feel fuller longer along with aiding digestion. I'm crazy about a yummy wholesome snack. I'll have to hide these from the kids! lol

Makes ~23

2 cups crushed organic popcorn (I fresh pop without oils)

1/2 cup all natural unsalted almond butter

1/3 cup rough chopped dried cherries

2 Tbs mini chocolate chips (Enjoy Life brand) or carob chips for chocolate alternative

1/4 cup pure maple syrup

Splash of pure vanilla

1/2 tsp sea salt

In large plastic bag crush popcorn into smaller pieces and pour into medium bowl.

In separate bowl combine and mix almond butter, syrup, salt and vanilla then pour over popcorn. Add dried cherries and chocolate chips and stir until combined and popcorn evenly coated with almond mixture.

Press into mini muffin tin firmly and place in refrigerator to firm up for at least 30 minutes. Store in airtight container for up to 1 week. Watch the reel here

Notes: Cherries are on the acidic side you may sub with unsulphured dried apricots or dates.
