Carrot Ginger Chicken Burgers
My carrot chronicles continue with these juicy and super tasty chicken burgers! And I have to say these are my favorite recipe out of the carrot bunch! Hidden vegetables that bring moisture and nutrients to these-promise you can't taste the carrots. The fresh ginger makes these flavorfully special! Healthy family meal in one bowl in under 30 minutes! Serve with easy lettuce buns.
1 lb ground chicken (fresh ground preferred)
1 1/4 cup carrot pulp (or grated carrots)
1/2 tsp turmeric
1/2 tsp cumin
1/2 tsp paprika
1 tsp pink salt
1 Tbs grated fresh ginger
1 Tbs extra virgin olive oil
2 garlic cloves minced (optional)
Preheat grill to medium-high heat (I use my George Foreman)
In medium bowl, combine all ingredients and mix well with your hands to evenly distribute. Do not over handle. Form 4 patties. Make an indention in the center of the patty with your thumb.
Lightly spray grill with healthy oil. Cook until internal temp reaches 160-165 (about 5 minutes on the Foreman) let rest for a few minutes and serve!
