Carob Chia Pudding

This chia pudding is unlike any chia puddings I've made before! I usually mix chia seeds and non dairy milk then add toppings after it's solidified. This time, using my favorite appliance (my mini processor) I added all the ingredients/flavors and blitzed for the perfect pudding combo! There are so many amazing nutritious things happening in this little pudding cup. Calcium, protein and omega 3-s from the chia. Extra protein and healthy fats from the almond butter. Tissue repairing collagen and protein bump with my fave protein powder. Why carob powder you ask? It's a great chocolate substitute without its reflux effects. I quickly ate one for an afternoon snack and the other will be for breakfast tomorrow!

Serves 2


1 ripe banana

1/3 cup non dairy milk

1 heaping Tbs all natural almond butter

3 Tbs chia seeds

1 Tbs carob powder

1-2 Tbs Vital Proteins Collagen powder

Pinch of sea salt


Place all ingredients in mini processor and blitz until well combined. Pour into 2 small dishes. Refrigerate at least 30 minutes before enjoying! Topping with a little dollop of non dairy whipped cream would make this extra lush!
