Butternut Squash Meatballs

I can never grow tired of meatballs! They are incredibly universal for your protein component. Have on pasta, salads, in a wrap or for breakfast which is what I had in mind when putting this recipe together. I need something other than oats or eggs for breakfast sometimes and these fit the bill!

Makes ~29


1 lb 93% ground turkey

2 cups blitzed butternut squash

1/2 cup sauteed mushrooms

1 Tbs extra virgin olive oil

1/2 sprig finely diced rosemary

1/2 tsp sage powder

1/2 tsp pink or sea salt

Pepper to taste


Preheat oven to 375. Line baking sheet with parchment paper.


Place cubed squash & cooked mushrooms into processor and blitz into small bits. I buy pre-cut butternut squash cubes at Trader Joes or Whole Foods.


In a medium bowl, mix ground turkey, oil, squash, mushrooms & seasonings until well combined. Using 1.5 Tbs cookie scoop, place meatballs onto sheet and bake 15 minutes or until internal temp reaches 165.
