Breakfast Skillet

A great recipe for a nourishing breakfast or any meal! A flavorful skillet meal full of protein, fruit, veggies and no eggs! (Of course you can add eggs but it's nice to have a breakfast option that doesn't include them). I love the kale addition for that wonderful dose of power greens!

Serves 2-3

2 medium sweet potatoes diced

1 gala apple diced

1 cup sliced mushrooms

1-2 Tbs healthy oil (extra virgin olive oil or avocado oil)

2 Applegate chicken and apple sausages sliced

2 large handfuls shredded kale

3 Tbs water or broth

Sprinkle of cumin and cinnamon

Sea salt/ pink & pepper to taste

In large skillet, warm 1/2 Tbs oil on medium-high heat and cook mushrooms 5 minutes without moving, then turn and cook another 3 minutes. Remove from skillet and set aside.

Wipe down skillet with a paper towel and add a little more oil to the pan. Over medium-high heat, sear sliced sausage for about 1 minute each side to lightly brown and set with aside with mushrooms.

Wipe out skillet and add 1 Tbs oil, warming to medium-high heat. Add diced sweet potatoes. Sprinkle with salt & pepper. Cook 2-3 minutes, stirring occasionally. Then cover and cook another 5 minutes, stirring half way until starting to soften.

Add broth, apples and kale. Sprinkle with cinnamon and cumin. Cover and cook another 2 minutes.

Add sausage and mushrooms and stir for 30-60 seconds to warm through and serve!
