Blueberry Quinoa Bowl


I love quick and easy meal ideas! This bowl is one step easier being that it's served cold. No microwave? No time? On the go? This ticks all those boxes! Gluten free, dairy free, nutrient dense and delicious! Quinoa used to be exotic to me so I always feel extra healthy when I include this super food in my diet!

Serves 1


3/4 cup cooked quinoa

1/4 cup blueberries

1/4 cup chopped cucumbers

1/4 cup diced all natural rotisserie chicken

1/2 sliced avocado

1 tsp extra virgin olive oil

Garnish with chopped cilantro

Zest of 1 lime

Pink salt & pepper to taste


Place quinoa in small bowl and drizzle olive oil on top. Add remaining ingredients and enjoy!
