Banana Chocolate Cake

I like to have a little something sweet with my morning coffee or as a treat option... always! Better to have something wholesome and nutrient dense on hand rather than caving at the coffee shop's offerings! This cake is filled with real ingredients, fulfilling your nutrition needs and sweet tooth cravings!

GF/DF/RSF

Serves 8-10


Dry

1 3/4 cup oat flour

3/4 cup blanched almond flour

1 tsp cinnamon powder

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp sea salt

1/2 cup dark chocolate chips (or carob)


Wet

4 small ripe bananas

2 eggs

1/2 cup pure maple syrup

1/4 cup extra virgin olive oil or avocado

1 tsp pure vanilla extract


Preheat oven to 350. Line 9 inch round cake pan with parchment paper. Spritz a little oil on the pan and the parchment adheres easily!


In medium bowl, whisk together all dry ingredients except chocolate chips.


In separate medium bowl, mix together wet ingredients thoroughly and then add dry ingredients, stirring until well combined. Stir in chocolate chips. Pour into cake pan. Sprinkle a few more chocolate chips on top if you wish.


Bake 35-40 minutes until toothpick comes out clean. Cool 5 minutes in pan and then remove to wire rack to finish cooling. Allow 15-30 minutes before cutting, it's worth the wait! Watch the reel here https://www.instagram.com/p/CrcOlY-rhbg/
