Banana Bread

One thing I remember my mom consistently making when I was a kid was banana bread! I love to do the same for my kids. Nothing beats the smell of fresh baked bread and banana bread is about the easiest bread there is to make! White whole wheat flour keeps the bread light in texture without compromising the benefit of whole grains. Pure maple syrup and plant based milk keeps it refined sugar and dairy free. Flax eggs work great in the recipe for a vegan option.
Serves 10-12
Dry
1 3/4 cups white whole wheat flour
1 tsp baking soda
1/2 tsp pink salt
1/2 tsp cinnamon (optional)
Wet
3 medium very ripe bananas (mashed)
2 eggs (or flax eggs)
1/3 cup pure maple syrup
1/3 extra virgin olive oil
2 Tbs unsweetened applesauce
1/4 cup plant based milk
1 tsp pure vanilla extract
Preheat oven to 350. Line loaf pan with parchment paper. In large bowl, whisk together wet ingredients. In smaller bowl whisk together dry ingredients, then add to wet. Using a mixer or large spoon, mix until incorporated and pour into loaf pan. Bake 55 minutes or until toothpick comes out clean. Let cool in pan 10 minutes and remove to cooling rack to finish cooling. Store at room temperature for 24 hours then refrigerate. Watch the reel here https://www.instagram.com/p/CjvWzzCvYI8/
