Autumnal Kale and Quinoa Salad

I just love a gorgeous salad, the more colors the more nutrition! Eat the rainbow, as they say!
2-3 cups curly kale
1 small sliced carrot
1/4 cup diced beets
1/4 cup corn (I cut fresh off the cob)
1/4 cup quartered cucumbers
1/2 cup shredded chicken
1/3 cup cooked quinoa
2 Tbs chickpeas
Feel free to adjust the amounts, measurements estimated as I just throw it all on and make it look pretty :) Dress with your favorite clean dressing. I have several healthy options in my dips, dressings and sauces guide. You can always drizzle with a little extra virgin olive oil and salt-yum!
