Anti-Inflammatory Sweet Potato Soup

We had our first freeze of the season last night. The flowers have been covered and of course... soup is on! This nutrient rich sweet potato soup has carrots, ginger, cinnamon and turmeric which all have potent anti-inflammatory benefits. Bonus is they happen to marry perfectly resulting in a wonderful, comforting bowl of goodness. Arm yourself with natural healing foods! I promise your body will thank you.

Serves 6

1 Tbs extra virgin olive oil

3 large sweet potatoes

1 cup diced carrots

1/4 cup diced celery

1/2 Tbs fresh ginger or 1/4 tsp powder

1/4 cup sliced leeks (optional)

1 minced garlic clove (optional)

4 cups chicken or vegetable broth (I used homemade)

1/4 tsp black pepper

1/4 tsp sea salt (I used Celtic)

1/2 tsp paprika

1/2 tsp cinnamon

1/2 tsp turmeric

Preheat oven to 400. Place sweet potatoes on parchment lined baking sheet and roast for 1-1/2 hours until tender. Remove from skins, mash and set aside.

Place olive oil in large stockpot and set to medium-high heat. Add carrots, celery, ginger, garlic and leeks (if using). Saute for a few minutes until fragrant and everything starts to soften.

Add sweet potatoes, broth and seasonings to pot. Bring to a boil then simmer for 30 minutes.

Transfer to high speed blender and blend for 1-2 minutes until smooth.

Sprinkle with cinnamon and pumpkin seeds if desired. For a creamier soup, mix in a little coconut milk. Enjoy! Watch the reel here

Note: By cooking garlic and onions at high heat, the relaxant effect on the lower esophageal sphincter is reduced. This may allow for tolerability in reflux sufferers.
