Air Fryer Zucchini Fries

I've known zucchini fries are out there but honestly they haven't appealed to me that much lol Zucchini has a bitter note that I'm not a fan of BUT don't knock it if you haven't tried it right?! And I'm so glad I did because there was no bitterness detected and the gluten free, egg free coating was delicious! I ended up eating a whole zucchini and then my "no love for veggies" husband enters the kitchen and eats the rest!

Serves 4


2 medium zucchinis

1/3 cup fine almond flour

1/3 cup pumpkin seeds

1/3 cup nutritional yeast

1 tsp Italian seasoning

1/2 tsp sea salt

1/2 plant based milk or water


Preheat air fryer to 400. Cut zucchini into fries and set aside.


Place almond flour, pumpkin seeds, yeast, italian seasoning and salt in processor and process until blended.


Set up 2 small bowls for zucchini preparation. Pour milk in one bowl and coating mixture in the other.


Dip zucchini in milk and toss in almond mixture to coat. Repeat this process, transferring coated zucchini onto plate. Working in batches, air fry zucchini for 8-9 minutes until crispy.
