2 Ingredient Oat Tortillas!
These tortillas are so dang easy and delicious! Perfectly pliable and can hold any of your favorite fillings. I spread mashed sweet potatoes and pecan butter with a little cinnamon for dinner last night and they made me so happy! Use for tacos, burritos, bananas and pb, quesadillas... yay let's get cooking!
1 cup super fine gluten free oat flour
3/4 cup water
Pink salt (optional)
In medium bowl, whisk oat flour and water until smooth and combined.
Pour 1/4 cup batter onto medium high non stick skillet. Add a little oil if needed (none was necessary for me).
Spread in wider circle by using handle of skillet to rotate. Flip after 1-2 minutes (edges will begin to curl up) and cook an additional minute.
Add more water as needed to keep batter runny, the oat mixture will thicken as it sits.
